Celebrate St. Patty's With Guinness Draught Corned Beef and Cabbage

With ingredients at your local stores you can create this hearty dish of corned beef and cabbage to help your appetite celebrate St. Patty's Day. By Natalia Motola | 1:29pm St. Patrick's Day, originally a Catholic holiday, has become a celebration of Irish culture. Rumor has it that St. Patrick used the shamrock to help people understand the Holy Trinity. The color green and the shamrock are symbols of this special day. Grocery stores in Town and Country and Manchester are rolling out the green carpet for St. Patrick's Day, offering many specials, incuding green carnations at Schnucks , 10 for$10, and 69 cents each at Dierbergs . Dierbergs also has four and 6-inch oxalis plants, for $3.99 and $7.99 respectively. Many associate corned beef and cabbage with Ireland. However, it's native to the U.S. but it wasn't until Irish immigrants began to eat it here that the dish became recognized as an Irish dish. Beef was a luxury in Ireland and not eaten often, but in the U.S. is was financially more accessible and prevalent. Irish immigrants in the 1800s frequently purchased corned beef from their Jewish, neighborhood butchers, but now we can just take a trip to our neighborhood grocery store to get all we need to make a great dish. The item of the week at Straub's is Kobe corned beef brisket for $7.99 per pound. According to Straub's,"Kobe beef is considered the most exclusive beef in the world, coming from the legendary Wagyu cattle that have been pampered for centuries with an all-natural and hormone free diet. This beef is exquisitely tender and unbelievably succulent." Whole Foods is offering Wellshire corned beef and its own house-madecorned beef  for $5.99 per pound until they run out. The cuts for the house made brisket are flat, center cut and rounds. Dierbergs in Manchester has Colorado Premium corned beef, flat cut brisket for $2.99 and Colorado Premium, corned beef rounds for$3.39 per pound until supplies last. Once you have your ingredients you can make an easy and delicious dinner to help your hunger celebrate St. Patty's Day! Guinness Draught Corned Beef and Cabbage, 8 servings Ingredients: 4 pounds corned beef brisket, flat cut 1 bottle Guinness draught* 1 yellow onion, peeled and halved 1 tart apple, peeled and diced 4 garlic cloves, minced 1 bay leaf 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves (to taste) 1/4 teaspoon ground allspice 1  head cabbage, cut into wedges, rinsed and drained 16 small red potatoes, halved 2 pounds baby carrots 1 tablespoon unsalted butter 2 tablespoons parsley, chopped salt and pepper to taste Method: 1.Rinse brine off of corned beef with cool water and pat dry. Lightly season with salt and pepper. 2.Brown corned beef well on all sides over high heat. 3.Pour Guinness over the meat, add enough water to just cover the brisket. 4.Add the onion, garlic, bay leaf, cinnamon, cloves and allspice to the pot. 5.Bring pot to a boil and skim off anyfoam. 6.Reduce heat to a simmer. Cover potand simmer for 3 hours, until meat is tender. 7.Add carrots, potatoes, apple and cabbage wedges to pot. Cover and continue cooking until meat and vegetables are tender, about 20 minutes. Remove and discard onion. 8.Remove meat and remaining vegetables to warm serving platter, leaving the cooking liquid in pot. 9.Over high heat, bring the cooking liquid to a boil and cook until the amount of liquid is reduced by half, about 10 minutes. 10.Take reduced liquid (sauce) off ofheat and add butter, swirling gently. 11.Slice the corned beef across the grain and serve with vegetbles and  sauce. Sprinkle with parsley *Guinness Draught Stout is used to describe the cans and bottles sold by Guinness that incorporate a device that delivers nitrogen into the beer during serving to give it a more draft-like taste and texture. The Extra Stout does not incorporate this widget and additionally has a much heartier, dark roasted flavor, but slightly more intense. Use the draught so the dish is not bitter. If you are not inclined to cook, Schnucks will have a cooked corned beef and cabbage dinner with horseradish sauce and sides of cabbage, carrots, and red potatoes. Itis  packaged and ready to go in the self-service case for $4.99 each. Dierbergs is offering cooked corned beef dinners including, "steamed cabbage, buttery dill red skin potatoes, brown sugar-maple carrots, dinner rolls, and house made creamy horseradish sauce." The individual dinner is $6.99 (does not include rolls), family meal for four is$39.99 and $79.99 for a family of eight.
